Wine of kings, king of wines

Sweet Aszú is the most famous, the most prized wine of Tokaj. I talked about "Wine of kings, king of wines". Also today, delights and, according to many, is the best sweet wine in the world.

The original method of producing these wines was developed at the turn of the 16th and 17th centuries. Their secret was in the process of so-called botritization. The "spoilage" of the fruit is apparent. The underlying noble mold Botrytis cinerea only develops on the surface of the fruit. It dries them into soft raisins. These fruits are harvested individually. Each bunch is inspected during the harvest, separating the most dehydrated.

They are stored in tanks in which a very aromatic syrup is pressed. It is one of the ingredients of aszú wines. The second is the must or the so-called base wine to which it is added. Barrels with young wine are placed in cellars carved in rocks covered with natural black mold. The wine is poured into bottles after 5, 6, 7 or 8 years of maturation.
